One of the most common questions we get comes from people who wonder how we’re able to make grab-and-go sandwiches that stay fresh on shelves. The short answer? We use something called the gas flushing process to change the sandwiches’ environment.

Basically, we modify the atmosphere inside the sandwich’s package. To do this, we take out all of the oxygen inside the package and add other gas mixtures instead. While this may sound scary, it’s actually extremely common and safe.

Just like pre-sliced pepperoni or the deli meat you buy at the grocery store, when we replace the oxygen in a container with other gases like nitrogen and carbon dioxide, the food inside lasts longer with less preservatives. When oxygen is not present, the products are much more resistant to mold growth and do not become stale as quickly—resulting in a sandwich that is as fresh on Day 5, Day 10, or Day 15 as it was on Day 1. And of course, we always have an expiration date printed on each product so you know it’s still fresh.
